I have to admit that while I thought these cookies were good, I didn’t love them. I thought they sounded so promising; I love cashews, I love sticky, gooey butterscotch, and I love shortbread. The combination of the three in bar-cookie form just didn’t knock my socks off. Don’t get me wrong, they were good enough for me to eat one each day for three or four days, but I could keep my hands off of them, which is unusual with me and baked goods! With the chocolate chip cookies from last week, I ate some before breakfast, some on my way out the door to run errands, a few while cooking dinner…You get the picture.

  2. I agree, I didn’t love mine either but I think I put a little too much corn syrup in my caramel so it was awful thick and just too sweet. My bad 😀

  4. I’ve had a very easy time staying away from these, too (and I was just like you with the chocolate chip cookies). Butterscotch isn’t really my favorite flavor though so I think that’s why these aren’t calling my name. I think that I’ll probably give most of mine away. But they’re so easy to make that I also think that I’ll make them again for other people.

    I thought this recipe was so simple and my famiy loved them! Im trying to cut back on sweets so I had a tiny bite.

  7. Your bars look terrific! You know, I liked them a lot, but I can resist doing things like bringing them to work to snack on and stopping by the cookie jar whenever I walk through the kitchen, which I couldn’t with the chocolate chip cookies from last week. Congrats on a year of blogging!

    Your bars look fabulous, but I’m sorry you weren’t blown away by the taste. You’re absolutely right, the “can’t-keep-your-hands-off-them” quality is what separates okay recipes from truly great recipes. Hopefully next Sunday’s selection will have the “Wow!” factor.
