Sweet Melissa Sundays: Lemon-Sour Cream Pound Cake, huh?!

Due to a recently-diagnosed peanut allergy in the family, baking has been a little interesting of late. I missed last Sunday’s Sweet Melissa recipe (chocolate pie crust), but wasn’t about to miss two weeks in a row. I left out the called-for walnuts (why do they insist on processing all nuts in the same plant?) and forged ahead. I don’t know what I did wrong, but the outside of the loaf burned and the inside stayed undercooked in places. I have no idea how this happened, but the recipe got raves from everyone else, so please check out the SMS blogroll to see how this cake should have looked and tasted! It was worse than it looked. Trust me!

  1. I felt like my edges were done way quicker than the inside. I covered it with foil in the end.

    The flavor was so good! Sorry you weren’t happy with yours.

  2. You’re right, it doesn’t look bad! I can only imagine the inside, though. I baked mine in a bundt pan. Since it wasn’t as think, I think it cooked pretty evenly. My family loved it!

  3. Darn it I hate when those things happen. It was a good recipe maybe you can try it again someday. If your like me I won’t try recipes more then once if there a flop. I figure there are so many recipes out that I want to try!!

  4. Oh, I always feel so disgusted when going through the effort to put a recipe together and the result comes out wrong. Your picture of the loaf looks great though and we hope there are some parts of the loaf edible. Next week will be so much better =)

  5. I’m sorry this didn’t work for you. That’s happened to me more times than I care to think of. As it was, I kept poking my cakes and I had to wait forever for the inside to bake while the edges burned. Yours looks wonderful, and if you hadn’t mentioned that it didn’t bake all the way through I’d never have known.

  6. Oh, no! Baking times for quick breads can be so finicky. I made a large loaf for this recipe, but have taken to using my mini pans a lot since they bake quicker and more evenly.

  7. Oh dear! That’s always so frustrating when that happens. Maybe a slightly too hot oven?? Somedays it doesn’t matter what I do but a recipe just decides to fall a bit flat… But looks lovely!

I’m glad that you forged ahead and didn’t miss two weeks in a row. You’re such a dedicated SMSer and your photos are always adorable! I’m sorry that your pound cake didn’t turn out well – it really was a good cake. I hope that you try it again some day.
