I’m hoping you guys can still get meyer lemons at your local grocery store, because these cupcakes are amazing!! We still have dozens of meyer lemons on our little potted tree, and we’re still looking for ways to use them up. So far, we’ve made lemon curd, lemon-lime yogurt cake, and these delicious meyer lemon cupcakes with meyer lemon buttercream. Up next on our list is meyer lemon meringue pie, which we’ll make right after we finish off the lime pie we made over the weekend while trying to use up our bumper crop of limes. A few years ago, my sister recommended a recipe for Raspberry Lemon Cupcakes from My Baking Addiction, which were adapted from Dorie Greenspan’s Perfect Party Cake. It’s a super solid recipe, and a great jumping-off point for anything involving white cake or lemon cake. This meyer lemon adaption is not to be missed!
