Sweet Melissa Sundays: Butterscotch Cashew Bars

**If you are looking for the Pina Colada Cake from the Cake Slice Bakers, just scroll down! And stay tuned: my blog’s 1 year anniversary AND my 100th post are both coming up soon, and I’m thinking of doing a little give-away to celebrate!**

This week’s recipe for Butterscotch Cashew Bars from the Sweet Melissa Baking Book was chosen by Pamela of Cookies with Boys. If you are interested in the recipe for these tasty bar cookies, please visit her blog!

I have to admit that while I thought these cookies were good, I didn’t love them. I thought they sounded so promising; I love cashews, I love sticky, gooey butterscotch, and I love shortbread. The combination of the three in bar-cookie form just didn’t knock my socks off. Don’t get me wrong, they were good enough for me to eat one each day for three or four days, but I could keep my hands off of them, which is unusual with me and baked goods! With the chocolate chip cookies from last week, I ate some before breakfast, some on my way out the door to run errands, a few while cooking dinner…You get the picture.

  1. it looks like you did a great job! i passed this week because of vacation. i was curious about the mixture of ingredients… i guess i know now! thanks!

  2. I agree, I didn’t love mine either but I think I put a little too much corn syrup in my caramel so it was awful thick and just too sweet. My bad 😀

  3. Thanks for baking along with me this week. I’m sorry it wasn’t a huge hit for you, but I’m glad you tried them with me! They look great, too!

  4. I’ve had a very easy time staying away from these, too (and I was just like you with the chocolate chip cookies). Butterscotch isn’t really my favorite flavor though so I think that’s why these aren’t calling my name. I think that I’ll probably give most of mine away. But they’re so easy to make that I also think that I’ll make them again for other people.

  5. Sorry they didn’t have you eating the entire pan…well proubably a good thing, huh!
I thought this recipe was so simple and my famiy loved them! Im trying to cut back on sweets so I had a tiny bite.

  6. That was so sweet of you to send Katie(cakes) the butterscotch chips. I’m sorry that you didn’t like this weeks recipe, but glad that you tried it. The chocolate chip, almond cookies were a HUGE hit with me and everyone else in my family too.

  7. Your bars look terrific! You know, I liked them a lot, but I can resist doing things like bringing them to work to snack on and stopping by the cookie jar whenever I walk through the kitchen, which I couldn’t with the chocolate chip cookies from last week. Congrats on a year of blogging!

  8. Hi Melissa!

Your bars look fabulous, but I’m sorry you weren’t blown away by the taste. You’re absolutely right, the “can’t-keep-your-hands-off-them” quality is what separates okay recipes from truly great recipes. Hopefully next Sunday’s selection will have the “Wow!” factor.

Thanks so much for stopping by my site and saying hello. Can’t wait to talk again after the next SMS postings! Have a wonderful rest of your week!

  9. Your bars looks so delicious! I think the flavor combination is a love or not kind of thing. Even the title does not get everyone’s tastebuds drooling =).
