We’ve been on a homemade ice cream sandwich kick lately at our house! They couldn’t be easier to make, they couldn’t be easier to eat (pull one out of the freezer and commence eating!), and they’re a delightful departure from either cookies or ice cream by themselves. We’ve tried a bunch of different cookie/ice cream combos, but these pale pink strawberry ice cream sandwiches I created for Julep are especially cute and delicious.
