I may be biased, but my mom is pretty much the best cook around! I was so lucky to grow up in a home filled with amazing food, and my kids are lucky to have Grammy nearby, offering to feed them delicious treats at the drop of a hat. This is one of the dishes I remember most from my childhood, and one that my siblings and I still love as adults. Filled with veggies and sweet corn, it is so cozy and comforting, so homey and wholesome. Like all good comfort food, it reminds me of home!
Mom’s Sweet Corn Chowder
from my sweet mom
1 lb bacon, chopped
1 medium onion, diced
1/2 cup diced carrot
1/2 cup diced celery
4 medium baking potatoes, peeled and diced
milk
2 Tablespoons cornstarch
4 ears corn, kernals cut off (or 1 bag frozen corn)
salt and pepper
In a heavy-bottomed pot or dutch oven, brown bacon over medium heat until crispy. Using a slotted spoon, remove bacon and let drain on a paper towel-lined plate. Pour off all but 1 Tablespoon bacon grease. Add onion, carrot, and celery to pot and saute until veggies are tender. Add potatoes and toss to coat with bacon drippings. Add enough milk to completely cover the potatoes. Simmer until potatoes are tender. Mix cornstarch with 1 more cup milk and add to pot. Simmer until thickened, 1-2 minutes. If you want the chowder thicker, mix another Tablespoon of cornstarch with a few Tablespoons of milk and add it to the pot. Add fresh corn and bacon and heat through. Season to taste and serve hot!
I hvae seen this dish several times in American food blog and alsways wanted to try it out. After I read you recipe, so easy and quick to make… I will try tonight! I need something easy and that does not take too long, and I have all ingredients. As a second dish (I am Italian:)) we will eat smoked salmon ona bread and a nice salad.

I have loved corn chowder for as long as I can remember but have never made it. Mainly because no one else in my family likes it. However, we have our subdivision picnic coming up and everyone makes batches of soup and chili. This chowder will be mine this year. I can’t wait to try it. There’s an awful lot of bacon in it but I know this is comfort food at its best. Thanks for sharing.

lbkw0603–I’m usually so good at responding to comments; I don’t know how I missed yours! Yes, I think you could do it in a crockpot. I’m not a crockpot expert, but it seems like just about any recipe can be tweaked to work in a slow-cooker. Good luck, and if you try and are successful, come back and share your results!
I just made this last night and it was SUPER delicious! I added just a dash of sugar to give it a little something, and substitute the extra cup of milk for a cup of heavy cream, but other than that I left it as is. Thanks for the great recipe!!!

can you tell me how many people this recipe serves??? Also can this be made with skim milk and will it turn out the same???
Hi Angela! I would say it makes about 6 servings. And yes, you can use skim milk, although the chowder won’t turn out as creamy as if you used a milk with more fat.
