A few weekends ago, I had a fun date on the calendar: a long-distance pancake breakfast with my friend Tan, the lovely blogger behind the fabulous DIY blog Squirrelly Minds. Tan has a really fun series on her blog where she sets up long-distance hang-outs with friends who live far away, and I was thrilled when she asked me to hang out! Last year, I met Tan and her husband for breakfast at my family’s favorite pancake place when they were passing through town. For our long-distance date, I thought it would be fun to take my family to that same pancake restaurant while Tan and her husband went to their favorite breakfast restaurant–a family-style breakfast date!
Unfortunately, we got lots of snow and then a huge ice storm that weekend and couldn’t go anywhere. So we punted and made waffles at home! Strawberries, peaches, syrup, and whipped cream, all atop crisp, toasty waffles. Everybody got to choose their own toppings, and our waffle breakfast was a huge hit! It was so fun to make and eat breakfast as a family, and to chat with Tan on Twitter while she enjoyed a family-style breakfast too. Thanks for the lovely date, Tan! xoxo
