Last week was a crazy whirlwind of airplanes, rental cars, delicious food, and book signings. My book, Scandinavian Gatherings, launched one week ago today, and life has been moving nonstop ever since! I have details and photos to share of the book events from my east coast trip later in the week, but for today, there’s Banoffee Pie. Banoffee Pie is a delicious, British dessert invention that basically combines a bunch of things I love into one spectacular sweet! The word “banoffee” comes from a combination of the two main components of the pie: bananas and toffee (or caramel to us Americans). My version of Banoffee Pie has a buttery graham cracker crust topped with an easy-to-make stovetop caramel, slices of fresh banana, and piles of sweet whipped cream. If you really want to get crazy, you can add chocolate shavings or a drizzle of chocolate syrup too. It is so easy to make and so, so good, and you might just have all 6 ingredients in your kitchen as we speak. Check out the recipe on my latest post for Julep, and get baking!
