My youngest sister, Anna, gets to contribute one thing and one thing only to Thanksgiving dinner: Pie Crust Cookies. You’d think cookies made from pie crust sprinkled with cinnamon and sugar would be pretty average, but you’d be wrong: pie crust cookies are really, really tasty. Especially if you start with good pie crust. They disappear very quickly and never make it to the dessert table. They usually don’t even make it past dinner preparations; if you don’t hang around the kitchen waiting for them, you’re likely to miss them altogether!

Preheat the oven to whatever temperature your pie crust recipe (or box) calls for. In a small bowl, combine cinnamon and sugar. Roll out the pie crust as you would for a pie. Use cookie cutters to cut the crust into fun shapes, and place cut-outs on ungreased baking sheets. Sprinkle generously with the cinnamon and sugar mixture, and bake until lightly golden. Allow to cool before eating.
THIS IDEA PROVIDED THE GRANDCHILDREN AND I WITH AN AFTERNOON OF ‘TOGETHER’ TIME! AND GAVE THEM A NICE TREAT TO TAKE HOME TO MUM AND DAD!

My Mother used to make these with the left over pie crust. She would sprinkle the dough with cinnamon and sugar and roll them. We called them rolly-pollys! The best!

I’m replying nearly three years later! My mother always made these with leftover pie dough, but she spread with soft butter first, then the cinnamon and sugar. She rolled it and baked it, then cut into slices. We called them “Tootsies”!

My mom used leftover pie crust like this too. She just rolled it out, sprinkled on the cinnamon and sugar, and baked it. Never lasted for very long, that’s for sure. Made it once for my kids when they were little and they didn’t like it.
Maybe try again! I’m sure they’ll thank you for it when they’re older!

I love the idea of using pie crust and cutting them out with cookie cutters so it would be easy to make with your children if you have any at home who are young enough to want to enjoy cooking with their mother But I Don’t Have Small Children But I do have grandchildren who are at the age of trying to bake on their own or supervised with an adult so when I go up and visit my grand kids I will make some Now Then I Thank You So Much For The Recipe!!

I remember making these from left over pie dough when I was a little girl. We called them “suzie pies”. Don’t know where that name came from but we loved them.
