Ice cream is the best thing I can think of to celebrate the last official weekend of summer! Homemade ice cream is even better, but if you don’t have time (or an ice cream freezer), this easy lemon ice cream tastes just like homemade minus any of the fuss. It would be a most delightful ending to this most wonderful summer season.

This is ingenious!!! I never would have thought of combining ice cream with juice concentrate. This makes me think of ALL the other combinations that are possible. Lately, I’ve been missing the guava juice concentrate from Hawaii. I bet that would be really delicious too. From someone without an ice cream maker: thank you!
