Happy Monday, friends! I know Mondays aren’t always the happiest day of the week, but today is different because today is National Chocolate Mint Day, and that gives us reason to celebrate. The university that I attended (longer ago than I care to think about) made great baked goods, and the one I remember most was their mint chocolate brownies. Fudgy bars topped with a bright green, minty frosting and topped with chocolate icing, they were a super popular treat, especially when your parents came to visit and took you out to the really good restaurants in town and bought you all the yummy treats from the campus food court. I’m pretty sure those mint brownies were the first ones I ever even heard of, and they set the bar for mint brownies pretty high. But I have to say, in all honesty, that as good as those mint chocolate brownies were, I think this homemade version is even better. The brownie layer is rich and delicious, with a texture perfectly situated somewhere between cakey and fudgy. The mint buttercream layer is sweet and minty without being overpowering, and the chocolate ganache is luxurious and silky. And because they are super rich and amazing, a whole 9×13″ pan makes plenty of servings to feed a crowd.
