Last night, we arrived back home after a long, magical week of Thanksgiving festivities with family on the east coast. All 18 of us visited Plimoth Plantation in Massachusetts, saw the Rockettes and 5th avenue holiday window displays in NYC, and took family photos in the Connecticut countryside. It was a truly wonderful and memorable holiday week. And of course we ate lots of delicious food. One of my new favorite holiday breakfasts that can feed a crowd is this super easy, super tasty Apple Cinnamon Stuffed French Toast Casserole. Like most overnight french toast casseroles, you mix chewy bread cubes with an easy milk and egg mixture, then set it in the fridge while you sleep. All you have to do in the morning is pop it in the oven to bake! This particular version is filled with tart bites of apple and rich bits of cream cheese, and the top is sprinkled with a generous helping of cinnamon sugar just before baking. We like to serve it drizzled with warm maple syrup and with a side of bacon or sausage links. It is a crowd-pleaser that you can easily scale up to feed a small army, so it’s perfect for breakfast guests or holiday brunches.
