My husband and kids love oatmeal cookies, but it took me a few years to find the perfect oatmeal cookie recipe. Some recipes I tried made cookies that were cakey, and some recipes made cookies that were buttery and paper thin. What I wanted was a cookie that was somewhere in between. I wanted a thick, chewy, soft, buttery cookie, and a few months ago I finally found one. In a cookbook that I put together 9 years ago and that I use weekly. It’s a recipe from my mother-in-law, and with a few simple changes, it has become our go-to oatmeal cookie recipe. The cookies are soft and chewy and buttery, and they are absolutely perfect!
