It’s been a looooong time since I’ve posted here! I’ve been hard at work getting my second book, Farmhouse Weekends, written, tested, and photographed. But summer weather is finally here, and I have a great grilling recipe to share with you, just in time for summer! Burgers are one of my family’s favorite things to grill, and while classic burger toppings are always welcome, I thought it would be fun to come up with something a little out of the ordinary for us: meet the tropical BBQ burger!

The tropical BBQ burger is super simple to make. Start by grilling up your favorite burger patties. Half of us chose beef patties, and half chose meatless Beyond Burger patties. I’m amazed at all the delicious burger options available at my local Albertsons grocery store. While the burgers are grilling up on one side of the grill, lay a piece of aluminum foil down on the other half. Lightly spray it with nonstick cooking spray, and put thinly sliced red onion rings and thinly sliced fresh pineapple pieces on top, seasoning both with salt and pepper. Let everything grill up until the burgers are cooked through, and the onions and pineapple are nice and tender. Before taking the burger patties off the grill, brush them with your favorite barbecue sauce and put a slice of medium cheddar on top and allow it to melt.

To build your burger, layer the patty, onions, and pineapple on a bun (I like to spread a little butter on mine and grill them first!), and add whatever other burger toppings you like: avocado, mayo, lettuce, crispy bacon, and a fried egg are all great options, but do whatever sounds delicious to you!
