This week’s recipe from The Sweet Melissa Baking Book, Strawberry Rhubarb Cobbler Pie, was chosen by Tracey of Tracey’s Culinary Adventures. The pie was delicious and absolutely perfect for the lovely spring weather we have finally received in the Pacific Northwest. Some notables from my experience: this was my first time cooking with rhubarb, and I liked it; I think I’ve finally nailed pie crust; and strawberries make your hands smell like candy–yum! I had the same problem that pretty much everyone else had: the filling was still soupy when the crust and cobbler topping were done. But the pie still tasted great, and I’m sure the soupiness can easily be fixed by adding more fruit and more cornstarch. Thanks, Tracey, for choosing another fantastic recipe. Your pie looks great! I still have to work on my fear of pie crust.
Beautiful pie! I love those two flavors together!!!
I have never tried rhubarb. Can you believe it?
You make everything look good though.
Great! This looks super nice!
Your pie is stunning Melissa! I love how vibrantly red the filling looks. Good for you on conquering the pie crust! I’m still a bit afraid of it even though I’ve definitely improved over the past 6 months. Glad you enjoyed the pie!
Thanks for baking with me this week š
Please please PLEASE share your secrets to nailing pie crust!! Mine was a disaster this week… I think I measured out the butter wrong… Yours looks amazing! x
Looks very comforting and delish…
