Last Fall, I wrote about this delicious minestrone soup for Eugene Magazine. The soup is packed full of flavor and fresh veggies, and even though it is warm and comforting, it is light enough for summer weather too. And it makes great use of all those veggies you’re growing in your garden or finding at the farmer’s market this time of year. You can find the recipe for this vegetable-packed minestrone HERE in the Eugene Magazine digital archives, along with a delicious recipe for grilled cheese sandwiches with pesto and white cheddar. They go beautifully with the minestrone, are fantastic dipped in warm marinara sauce, or taste great on their own.
If you love soup as much as I do, be sure to check out my recipe archives, where you’ll find gems like Chicken Tortilla Soup and Cheesy Vegetable Chowder, one of my oldest and most popular posts ever! And click HERE to see what other recipes I’ve written up for Eugene Magazine (teaser: they include Cinnamon Sugar Monkey Bread and Fried Peach Pies).
