Minestrone Soup with Pesto Grilled Cheese Sandwiches

A classic minestrone recipe packed with fresh garden vegetables.

Last Fall, I wrote about this delicious minestrone soup for Eugene Magazine. The soup is packed full of flavor and fresh veggies, and even though it is warm and comforting, it is light enough for summer weather too. And it makes great use of all those veggies you’re growing in your garden or finding at the farmer’s market this time of year.
