Classic Carrot Cake for Easter!

This classic carrot cake recipe is my favorite! The cake is loaded with shredded carrots and crushed pineapple, and the whole thing is topped with homemade cream cheese frosting. Delicious!

I’m so excited for Easter this weekend! As with most holidays, I really love Easter food: ham, potatoes, fresh Spring vegetables, and of course, sweets! Carrot cake seems tailor-made for this holiday, and this delicious, classic carrot cake recipe is my favorite. It is moist and flavorful, with an extra boost of scrumptiousness thanks to crushed pineapple. And it’s topped with cream cheese frosting, which I love on pretty much everything!

    1. Hi Shantal! I don’t have it anywhere!! I’m in the same boat as you, unfortunately. I’ll do some digging around and see what I can figure out.

    2. OK, here’s what I’ve got for you right now, Shantal, in case you need the recipe for Easter weekend! Go to the broken link then highlight and copy the URL. Then google “way back machine” and paste the URL into the internet archive bar, and it’ll pull up some dates. You should be able to click on any of the dates they give you and see a snapshot of the webpage from that URL on that day. I’d screenshot it or print it if you can. Good luck!!
